Vegan - 60 Minutes - Serves 6
1 Vegan Pre-Made Pie Crust (substitute with a gluten free crust!)
1 15 ounce can Pumpkin Puree
1/3 cup Brown Sugar, packed
1/4 cup Cane Sugar
3 tbsp Cornstarch
2 1/4 tsp Pumpkin Pie Spice
1/4 tsp Sea Salt
3/4 cup Non-Dairy Creamer
1 tsp Vanilla Extract
Preheat oven to 350 F. Pre-bake pie shell and cool before filling.
In a mixing bowl, combine pumpkin puree and sugars.
Whisk together starch and pumpkin pie spice. Stir into pumpkin mixture
Add in creamer and vanilla. Stir until well combined.
Pour mixture into pre-baked pie shell.
Bake for 45 - 50 minutes or until center is set. Cool pie completely before serving.
