Mini Coconut & Chia Waffles

Serves 16 Mini Waffles

Ingredients:

  • 2 1/4 cups All-Purpose Flour

  • 1 1/2 tsp Baking Powder

  • 1/4 tsp Baking Soda

  • 1/2 tsp Kosher Salt

  • 2 tbsp White Sugar

  • 1/2 cup Shredded Coconut, unsweetened

  • 1 1/2 cup Milk

  • 2 Eggs

  • Nutiva Organic Coconut Oil

  • Zest & Juice from 1/2 an Orange

  • 1 tsp Vanilla Extract

  • 2 tbsp Nutiva Organic Chia Seeds

  • Sliced bananas & shredded coconut for garnish


Directions:

  1. Preheat your waffle iron. In a large bowl, sift together the dry ingredients: flour, baking powder & soda, salt, and sugar. Whisk the coconut into the sifted flour mixture

  2. In a medium bowl, whisk together the wet ingredients: milk, eggs, coconut oil, orange zest & juice, and vanilla. Pour wet ingredients into the flour mixture and whisk to combine, without over mixing. Stir in chia seeds.

  3. Using a quarter cup measure, scoop the batter into the waffle iron and cook according to manufacturer instructions. (For full size waffles, a half cup measure might work better!) Top the cooked waffles with sliced banana and shredded coconut, enjoy!
