Hot Italian Paella

  • 4 Beyond Sausage Hot Italian links

  • 1/2 tsp Saffron

  • 2 1/2 cups Vegetable Stock

  • 2 Garlic Cloves

  • 1 Pepper

  • 1 Yellow Onion

  • 1/2 cup Cherry Tomatoes

  • 1 cup Paella Rice

  • 1 cup Frozen Peas

  • 1 Lemon

  • 1/4 cup Parsley


  1. Start by mixing the vegetable stock and saffron in a large bowl, allowing the saffron to infuse into the veggie stock.

  2. Heat pan to medium-high. Cook sausage according to package, about 9 - 10 minutes total. Remove from heat and slice into 1/2 inch pieces.

  3. In a large pan, heat the diced onions and cook until golden brown. Add garlic and pepper. After a few minutes, add tomatoes, stir, and cook for 3 minutes.

  4. Add in paella rice and stir. Once rice is translucent, add in your saffron-infused veggie stock. Let this simmer for about 20 minutes, stirring occasionally.

  5. Add in sausage and warmed peas. Top with squeezed lemon and parsley.
