1/4 - 1/2 cup cilantro rice
1 yellow pepper cut into strips
1/4 of a red onion
16 oz can of black beans
hot sauce (to taste)
lime (to taste)
salt & pepper
1 cup jasmine rice
2 cups water
1/4 cup chopped cilantro
salt to taste
Combine 1 cup rice with 2 cups water in a pot, add 1 tsp salt and bring to a boil. Reduce heat, cover, and let simmer for 18-20 minutes
Remove rice from heat and fluff with a fork. Stir in chopped cilantro until fully incorporated
Heat pan on medium heat with avocado oil, add red onion, peppers, and salt & pepper to pan. Saute until fully cooked, then heat up black beans.
Time to assemble the bowl! Start with rice at the base, add beans, cooked peppers, avocado, hot sauce, a squeeze of lime, cilantro and salt and pepper. Eat by itself or with nachos or tacos!
