Fiesta Bowl

Ingredients:


Bowl

  • 1/4 - 1/2 cup cilantro rice

  • 1 yellow pepper cut into strips

  • 1/4 of a red onion

  • 16 oz can of black beans

  • 1 avocado

  • hot sauce (to taste)

  • cilantro, chopped

  • lime (to taste)

  • salt & pepper

Cilantro Rice

  • 1 cup jasmine rice

  • 2 cups water

  • 1/4 cup chopped cilantro

  • salt to taste


Directions:

  1. Combine 1 cup rice with 2 cups water in a pot, add 1 tsp salt and bring to a boil. Reduce heat, cover, and let simmer for 18-20 minutes

  2. Remove rice from heat and fluff with a fork. Stir in chopped cilantro until fully incorporated

  3. Heat pan on medium heat with avocado oil, add red onion, peppers, and salt & pepper to pan. Saute until fully cooked, then heat up black beans.

  4. Time to assemble the bowl! Start with rice at the base, add beans, cooked peppers, avocado, hot sauce, a squeeze of lime, cilantro and salt and pepper. Eat by itself or with nachos or tacos!
